MONTEREY, Calif. (May 22, 2008) Clement Chen III, president of Pacific Hotel Management, LLC (PHM), has appointed Jerry Regester as executive chef at The C Restaurant + Bar at the InterContinental The Clement Monterey, a newly constructed luxury hotel on historic Cannery Row overlooking the spectacular Monterey Bay. Chef Regester, most recently executive chef at The Restaurant at Wente Vineyards, will draw from the Central Coasts bounty of fresh seafood and locally-grown produce, as well as procure the highest quality ingredients such as Niman Ranch pork and beef, to create menu selections for the most discerning palates.

The C Restaurant + Bar at InterContinental The Clement Monterey is located next door to the acclaimed Monterey Bay Aquarium, one of the worlds foremost oceanic research and educational centers. The Monterey Bay Aquariums highly regarded Seafood Watch guidelines are those which Regester follows in selecting seafood for his dishes.
Chef Regester brings the same hands-on approach to The C Restaurant + Bar that served him well at his previous role as executive chef for The Restaurant at Wente Vineyards in Livermore, California. An award-winning chef with numerous accomplishments, Regester most recently served as the executive chef for the First Annual Pebble Beach Food and Wine event, which involved planning, organizing, and managing logistics for more than 50 of the countrys top chefs throughout the four-day event at the famed Pebble Beach resort.
Regesters menu selections at The C, which is open daily for breakfast, lunch and dinner, include take offs on classic dishes and Regesters signature specialties such as Monterey Cioppino made with Mini Cheese Ravioli, Artichokes, Tuna, Clams & Calamari in a Spicy Dungeness Crab Broth and Fettuccine with Smoked Sardines made with Sun-dried Tomatoes, Shaved Gilroy Garlic, Basil & Local Olive Oil. Guests can also enjoy offerings from The Cs raw bar, and families will appreciate kid-friendly choices such as Mac n Cheese and The Clement Bistro Burger. Breakfast selections include The C Omelette with a choice of Rock Shrimp, Dungeness Crab Meat, or Smoked Salmon with Mushrooms, Sweet Peppers, Green Onions, Tomatoes, Avocado, Goat Cheese or Tillamook Cheddar Cheese and Huevos Rancheros de Mariscos with Rock Shrimp or Dungeness Crab in a Tortilla served with Avocado, Black Beans and Pasilla Pepper Sauce.
The C has a separate bar area for cocktails and other beverages along with an extensive appetizer menu. The C will also have special "cuisine to go" offerings available from the outside terrace for visitors who would like to walk up and place an order. The C will offer special treats such as Smore kits that guests will be able to enjoy at the patio fire pits while overlooking Monterey Bay.
The 208-room InterContinental The Clement Monterey is the optimal luxury hotel for Monterey leisure and business visitors.
